Berry and Poppyseed Salad

This is my favorite salad! Love Love Love! It’s perfect for summertime because A.) it’s cool and you don’t have to heat up your over and B.) berries are cheapest in the summertime! But honestly I would eat this salad anytime! The recipe for the salad is below, but really,  if you don’t have all the different kinds of berries or you have a different type of nut just throw it in there. When I make this salad for dinner my husband likes me to add grilled chicken to make it a little more “manly”. Try it.

Salad:

  • 1 head romaine lettuce
  • 3 cups baby spinach
  • 1 cup strawberries, chopped
  • 1 cup blueberries
  • 1 cup raspberries
  • 1 cup blackberries
  • 1/2 cup feta cheese
  • 1/3 cup chopped pecans

Dressing

  • 1/2 cup fat free miracle whip
  • 1/4 cup milk
  • 1/4 cup sugar
  • 1/8 cup white vinegar
  • 1 TBL poppyseeds

    HI, Kendra. Do you live on O’ahu? If so, where do you purchase your berries from? They’re not always in stock in the groceries close to me, and i’m always on the look out for new favorite salads. :)
